Domaine Courbis - Cornas - La Sabarotte 2018
Domaine Courbis is located in Châteaubourg, in the Ardèche. The brothers Laurent and Dominique now operate the family wine estate which dates back to the 16th century. The estate is the southernmost of the Saint-Joseph appellation, bordering on the Cornas appellation and is made up of around 35 hectares of vines.
La Sabarotte is made from Syrah vines planted in 1947 on hillsides facing south-east. The manual harvest is destemmed and crushed. The vinification takes place in closed stainless steel vats. The temperature is controlled at 30-32°C for maximum colour extraction. Pumping over are carried out regularly. The fermentation and maceration last from 3 weeks to 1 month. Malolactic fermentation is carried out in new barrels. The aging lasts 18 months in barrels; 70% new barrels and 30% single-wine barrels.
