Domaine Guillaume Gilles - Cornas - Chaillot 2018
Domaine Guillaume Gilles is located in Cornas, in the north of the Rhône Valley. Since 2002, Guillaume Gilles has been operating the estate that belonged to his grandfather. He learned the tricks of the trade through several internships with Jean-Louis Chave and Robert Michel between 2000 and 2004. When Robert Michel retired after the 2006 vintage, he rented him his best plot of the Chaillot vineyard and put his cellar at the disposition of Gilles. Today, he manages 5 hectares, with sustainable cultivation of the vines: working the soil, preserving biodiversity, no use of herbicides...
His philosophy is based on respect for the terroir, traditions and the environment. The work is done manually, the vinifications are carried out in whole bunches and without destemming, and the aging is micro-plots. Fermentation takes place in concrete vats using natural grape yeasts and maceration lasts at least 3 weeks with punching down and pumping over for extraction. The wines are then aged in oak barrels (10% of which are new) and demi-muids for 18 months and are neither filtered nor fined during bottling.
This Cornas comes from three plots of vines exposed to the South/South-West in the Chaillot section of the Coteau de Cornas: La Combe de Chaillot, Les Terrasses and Les Grandes Mures.
