LUCIEN AVIET - Red Tailed Melon - Cuvée des Docteurs 2020
The Caveau de Bacchus is based in Montigny , in the Jura . It was created in 1961 by Lucien Aviet , who was joined by his son Vincent in 1999. Lucien Aviet is still very involved, but now the reins are gradually being taken over by his son. Consisting of a small 6 hectares, the vineyard has a traditionalist tendency. The production is entirely harvested by hand and destemmed. Spontaneous fermentations take place in large, old, very well-maintained Alsace tuns. The bottles have always been sealed with wax and are now part of the hallmark of the wines.
Melon à Queue Rouge is a white grape variety from the same family as Chardonnay. The vines come from a mass selection, small clear berries but with a stem (tail) that turns red as the grapes ripen. The ripe grapes are golden, sometimes becoming a little pink, and give a white wine of great finesse, often with exotic aromas, citrus fruits and minerals as well. The harvest is entirely de-stemmed, and only indigenous yeasts are used during fermentation. The aging lasts between 12 and 36 months in tuns and on the lees , until the moment of bottling. "Cuvée des Docteurs" refers to the medical students who came to help Lucien Aviet during the harvest in the first years.
