New Grove Distillery is located in the north of Mauritius . The estate extends over 7,000 hectares, of which 6,000 hectares are devoted to the cultivation of sugar cane. The Terra Milling Group Ltd. ensures the cultivation of sugar cane and the management of the estate while Grays is the first distillery on the island, founded in 1838, and the Mauritian leader in alcohol and spirits. New Grove rums were born in 2003.
The distillery produces only natural and raw specialty sugars from 12 different types of cane sugar and molasses. The sugar cane harvest begins in June (beginning of winter) and ends in December (summer). The rums are mainly produced during the “cold” season (June, July and August) with freshly produced sulfur-free molasses and with their own yeast, cultivated for fermentation. The molasses wine is recovered after 30 hours of fermentation. It then passed through a wine preheater, before passing through a degassing column which eliminates the compounds. It will then pass through the distillation column (20 trays with copper valves) and through a rectification column (17 trays with caps and chimneys). Eight tappings then collect the aromatic compounds and eliminate the sulfur and incondensable compounds. The phlegm is collected on the reflux of the rectification column. Its alcoholic strength is 94°. This distillation process makes it possible to vary the level of the natural non-alcoholic components that give the rum its flavor depending on the type of final rum: light (100-120 g/hL), full-bodied (250-300 g/hL) and heavy ( 300-400g/hL).
New Grove Old Tradition 10 years old is a “loaded” molasses rum resulting from a blend of rums aged 10 to 14 years. The majority (70%) is aged in old French oak barrels and Cognac barrels. The other part (30%) is aged in new French oak barrels.
