Domain of the New Deal - Kashmir 2017
La Nouvelle Don(n)e is located at the Col de la Done on the land of Calce , in Roussillon . It was created by Wilfried Valat in 2007. The vineyard, saved from the uprooting for which it was intended, is divided into four islands: Clot de l'Olby, Clot du Mas, Clot de la Berne and Clot de the greenhouse. The cultivation method implemented throughout the estate aims to respect the environment and promote the proper functioning of the wine-growing ecosystems. It follows the specifications of organic farming for which the farm has been certified since 2011 on the historical part and since 2014 on the Bern and Greenhouse part. Ten years after the creation of the estate, Wilfried lives and vinifies his wines in Maury.
Kashmir is made from Carignan , harvested manually in Olby and Bern. The maceration is carried out in concrete vats and the fermentation is spontaneous with indigenous yeasts. The aging lasts 12 months in stainless steel vats and in barrels of 2 to 5 wines . The different batches are blended in concrete vats before bottling. To preserve its freshness and give it a sparkling sensation , this wine contains a high level of natural CO2 from the initial fermentation (> 1g/L). In no case is it a refermentation in the bottle. To reduce this CO2 concentration after opening, invert the bottle several times and let the gas escape.
