Domaine Patrick Baudouin - Le Cornillard 2020
Domaine Patrick Baudouin has thirteen hectares of vines on the terroirs of "black Anjou", to the west of Anjou , in the Loire Valley. The ground is composed of schists, sandstone, volcanic rocks from the very old Armorican base. In the vineyard; certified organic farming , constant search for the best human labor / biotope ratio, for a non-destructive and sustainable culture. Work on horseback throughout the estate, trees, eco-construction... The range is made up of chenins from Savennières, Quarts de Chaume, dry and semi-dry white Anjous, and sweet Côteaux du layon, red Anjous from Cabernets. The cellar, built in noble materials in 1910, has a neat, harmonious and functional architecture.
The Cornillard cuvée is made from Chenin Blanc from a plot on a hillside plunging towards the Layon. The average age of the vines is 50 to 70 years. The vinification is done without adding sulfur until the first racking. Fermentation is slow, until spring, without adding yeast, in new barrels and several wines. Malolactic conversion is spontaneous. Aging takes place in barrels until bottling.
