Domaine François Cotat - Sancerre White - Les Caillottes 2023
François Cotat is a winemaker located in the commune of Chavignol , within the Sancerre appellation in the Loire Valley. The Cotat family has been renowned in the region since the 1940s, and his cousin Pascal Cotat also produces wine in Sancerre. François Cotat manages 3 hectares of vines: 1/3 Pinot Noir, 2/3 Sauvignon Blanc. The vineyard is cultivated on clay-limestone hillsides, with a unique type of chalky soil called "terres blanches". It is not uncommon to see François Cotat's wines under the Vin de France status, since he tends not to follow the regulations of the Sancerre appellation (higher level of residual sugar or alcohol).
The Caillottes cuvée is made from vines grown on the very stony rocks of the same name. The Sauvignon Blanc is harvested by hand and fermented with its own yeasts before undergoing a light stirring at the end of fermentation. Aging lasts eight months in 600-liter barrels aged 6 to 8 years.
Grape variety: 100% Sauvignon Blanc
"A fresh and mineral wine, with aromas of lime, flint, and white flowers. A beautiful roundness brought by the aging in tuns and a saline finish that prolongs the purity of the terroir."
