Scapa Distillery is located in Kirkwall in the Orkney Islands, Scotland . It was founded in 1885 by Macfarlane & Townsend and is one of the most northerly distilleries in Scotland. In 1919, a fire threatened the establishment, extinguished thanks to the intervention of local sailors in a human chain. In 1954, it was acquired by Hiram Walker & Sons Ltd (now part of Pernod Ricard) and rebuilt. The distillery was mothballed in 1994, partially reactivated in 1997 and then relaunched in 2005 after a significant investment. The site is tiny and artisanal: only three employees , alternating shifts for manual production 24 hours a day. It notably uses a very rare Lomond still , witness to a technical tradition now lost elsewhere. Production is deliberately limited: barely one million litres per year , entirely unpeated.
The first age-declared editions form Scapa's new signature range. The 10 Year Old is aged in bourbon barrels.
Unpeated
" Scapa 10 Years Old seduces with its fresh and balanced profile. On the nose, notes of crisp apples, ripe pears and a hint of floral honey mingle with a slight marine salinity. The palate reveals a beautiful roundness, with flavors of buttered biscuits, sweet vanilla and a subtle touch of sweet spices. The finish is clean, slightly iodized, reminiscent of the Orkney breeze."
