RHUM CLEMENT - White Rum - Blue Cane - Vintage 2025 - 50%
The Clément house is one of the historic signatures of Martinican agricultural rum, born at the Habitation du Simon in François, in the heart of a hot, windy terroir bathed by the trade winds. Since the late 19th century, it has cultivated sugarcane as a true noble plant, with particular attention paid to the varieties and the freshness of the juice. Among these, the famous blue cane, recognizable by its purplish reflections, has become the emblem of the house’s white tasting rums. Clément has built its reputation on precise distillation, great purity of style, and an ability to express the personality of each vintage. The Canne Bleue cuvée fits into this tradition of excellence, assuming a clear, straightforward, and intensely aromatic single-variety profile. The 2025 vintage continues this approach, with an even clearer reading of the windy terroir and volcanic soils of the Martinican Atlantic coast.
Clément White Rum Blue Cane Vintage 2025 50% is made exclusively from pure juice of freshly pressed blue cane, harvested at optimal maturity from carefully selected plots. The fermentation, short but rigorously controlled, preserves the varietal signature of the cane while developing a precise aromatic profile. The traditional Creole column distillation offers a crystalline, vibrant distillate of great clarity, perfectly suited for a tasting bottling. The fifty percent alcohol level was chosen to enhance aromatic intensity and texture while maintaining great clarity on the palate. No sugar or additives are added, in accordance with the AOC Martinique specifications, allowing the blue cane to express itself in its purest form. This 2025 vintage positions itself as a characterful white rum, equally at ease in a high-end ti punch or pure tasting for discerning enthusiasts.
On tasting, Clément Canne Bleue 2025 presents clear and bright, with an explosive nose of fresh crunchy cane, lime zest, white flowers, and fine notes of white pepper. Upon aeration, nuances of cane sugar, very fresh exotic fruits, and a slight saline touch evoking the proximity of the ocean unfold. On the palate, the attack is frank and energetic, immediately carried by the aromatic richness of the blue cane and the liveliness of the proof. The body is ample but precise, with a subtle balance between vegetal tension, ripe citrus, and a natural sweetness that rounds off the edges. The finish is long, clean, vibrant, marked by a return to crunchy cane, fine herbs, and a noble, very salivating bitterness. Served in a ti punch simply accompanied by lime and a touch of sugar, it delivers an authentic tasting moment, but it also pairs brilliantly with dorado ceviche, cod accras, grilled seafood, or spicy Creole cuisine.
