Château Peyrat - Graves Blanc 2025
Located in Cérons, on the historic Graves route and in close proximity to the Sauternais, Château Peyrat occupies a seventeen-hectare enclosed vineyard in the heart of an old Bordeaux wine-growing area. The estate is based on a terroir where gravel and clay cover a limestone bedrock, a combination favorable both to the ripeness of the Sémillon and the freshness of the Sauvignon. The estate's work aims to restore the natural balance of the soils through mechanical interventions and sustained attention to biodiversity. This approach supports viticulture that allows the plant to adapt to its environment rather than seeking excessive yields or ripeness. The estate's whites are distinguished by a significant proportion of Sémillon, the historic grape variety of Graves, which brings breadth, texture, and aging potential. Sauvignon complements this matter with its energy, citrus notes, and aromatic precision. Château Peyrat thus offers a style of Bordeaux white wine that is both generous and taut, made for the table as much as for the aperitif.
The Graves Blanc 2025 blends 80% Sémillon and 20% Sauvignon from the estate's clay-gravel parcels. After harvest, the grapes undergo a slow direct pressing intended to gently extract the juices. A cold static settling then clarifies the musts before fermentation begins. These fermentations are conducted with indigenous yeasts in several types of containers, including tanks, barrels, and demi-muids. Stirring performed at the end of fermentation and during aging resuspends the fine lees to bring more volume and depth. The wine then rests on the lees, mainly in cement tanks, with a high proportion in demi-muids to enrich the texture without overpowering the fruit. The 2025 vintage thus combines the fleshiness of Sémillon with a freshness sharp enough to maintain a precise and balanced profile.
The pale yellow robe is tinged with green and slightly golden reflections. The nose opens on ripe pear, white peach, and lemon, then gains notes of acacia flowers, fine wax, and fresh almond. On aeration, some nuances of grapefruit, wet stone, and a delicately smoky touch appear. The palate has a lively attack, quickly enveloped by a broad and creamy matter from the Sémillon and lees aging. The Sauvignon maintains a lemony tension that avoids any heaviness and gives rhythm to the whole. The finish lingers on ripe citrus, white fruits, and fine bitters, with a discreet chalky sensation. This Graves Blanc will accompany oysters, grilled fish, scallops, creamy poultry, asparagus, or an aged goat cheese.
