Born from the collaboration between Romain Hénin and his brother Thomas under the Korrigans label, La Poire en deux 2024 marks a new step in their exploration of living beverages, following their notable work around cider. Based in Aÿ in Champagne, Romain Hénin here transposes his natural winemaker approach to the world of perry, with the same requirement: no additives, no corrections, and an absolute search for the sincerity of the fruit. The pears are sourced in Normandy, mainly in Orne and Cotentin, from producers committed to organic farming. This cuvée illustrates an original bridge between two terroirs, where the Norman raw material meets precise and demanding Champagne know-how. The identity of the project rests on this hybridization, between cider tradition and techniques from Champagne. La Poire en deux thus establishes itself as an artisanal, free, and deeply contemporary cuvée.
The blend is based on three emblematic varieties of perry: Plant de Blanc, known for its finesse and tension; Fossey, which brings a floral dimension; and Rouge Vigné, which structures the whole with more body. Once the juice is made, it is transported to Champagne where Romain Hénin applies a method inspired by champagne, with aging in barrels followed by natural secondary fermentation in the bottle. The wine is then aged on lees in the domain’s cellars in Aÿ, enhancing its complexity and texture. True to his philosophy, the entire process is done without additives and without added sulfites, with spontaneous fermentations thanks to indigenous yeasts. The disgorgement of the 2024 vintage took place in October 2025, with an extremely low dosage of 1 g/l, positioning this cuvée as Extra-Brut. The alcohol degree, at 7.5%, contributes to its light and digestible balance.
On tasting, La Poire en deux 2024 offers a delicate and expressive profile, where fresh pear blends with fine floral notes and a slight fermentative touch that underlines its natural character. The palate is slender, carried by fine effervescence and a great sensation of freshness, with a subtly vinous texture inherited from barrel aging. The balance between tension, fruit, and lightness makes it a particularly elegant and thirst-quenching drink, while retaining true complexity. The finish, clean and slightly dry, extends the aromas with precision and finesse.
