DILLON - Blue Cane - 50%
The Dillon House, founded in 1779 in Fort de France, is one of the emblematic distilleries of Martinique, the homeland of AOC agricole rum. Rooted in the heart of historic plantations, it perpetuates a Martinican tradition based on the valorization of pure cane juice, freshly distilled to capture the aromatic energy of the plant. The tropical climate, volcanic soils, and centuries-old know-how give Dillon rums a characteristic precision and liveliness. Among the most renowned cuvées, Blue Cane holds a unique place as it is made from a single variety of cane, the famous blue cane with violet reflections. This rare single-variety approach allows for a clearer, straighter, and highly intense aromatic profile. In the 50% version, Dillon Blue Cane is recognized for its purity, clarity, and brilliance, equally sought after for neat tasting as well as in traditional Caribbean cocktails.
Dillon Blue Cane 50% is born from freshly pressed cane juice, quickly fermented to preserve the aromatic freshness and the very marked varietal characteristics of the blue cane. The traditional Creole column distillation produces a clear, vibrant rum with great precision. The choice of bottling at 50% highlights the aromatic power while maintaining a nice roundness on the palate, a signature of high-quality Martinican agricole rums. No additives are used, in accordance with the strict requirements of the Martinique AOC, allowing the raw and vegetal identity of the pure juice to express itself. This cuvée is appreciated for its controlled intensity, its straightforward profile, and its ability to enhance ti punchs, where it offers a perfect balance between freshness, tension, and cane aromaticity. It also reveals in this edition a beautiful persistence, nourished by the quality of the distillate and the rigor of its production.
On tasting, Dillon Blue Cane 50% appears clear and bright, with a lively and expressive nose dominated by fresh cane, lemongrass, lime zest, and an elegant floral touch. On the palate, the attack is frank and energetic, supported by a broad texture where the crunchy cane intertwines with peppery and slightly iodized nuances. The 50% strength offers superb aromatic intensity without aggressiveness, with a progressive build-up emphasized by notes of fresh herbs, brown sugar, and citrus. The finish is long, clean, vibrant, leaving an impression of purity and salinity very characteristic of the best agricoles. This rum pairs ideally with a traditional ti punch but also accompanies a sea bream ceviche, cod accras, grilled seafood, or even a citrus dessert where its vegetal freshness creates a remarkable harmony.
