The Domaine Boris Champy is a major reference in the Hautes-Côtes de Beaune, located in Nantoux, on the heights of the Côte de Beaune. Former technical director of the Louis Latour house, Boris Champy chose to settle at altitude to express a fresher, more tense Burgundy deeply linked to its natural environment. The vineyard, situated between 350 and over 400 meters in altitude, benefits from a cooler and ventilated climate, conducive to slow and balanced ripening of the grapes. The estate is managed in Demeter certified biodynamics, with precise soil work, naturally low yields, and constant attention to the vitality of life. This demanding approach places the estate among the most emblematic players of committed contemporary Burgundy.
The cuvée Hautes-Côtes de Beaune “Presse Verticale 382” 2023 is a parcel-specific cuvée made exclusively from Chardonnay, whose name refers to the vertical pressing method as well as the precise altitude of the parcel, located at 382 meters. This high-altitude terroir gives the wine great freshness, marked natural tension, and a very clear mineral expression. The 2023 vintage, balanced and bright, allowed for ripe grapes while maintaining a structuring acidity. The vinification is carried out with extreme precision, in a low-intervention spirit, to preserve the identity of the place and the purity of the grape variety. The aging is discreet, bringing texture and depth without ever masking the wine's energy.
On tasting, the wine reveals a fine and expressive nose blending fresh white fruits, apple, pear, and lemony notes, complemented by floral nuances and a chalky touch. The palate is straight, tense, and chiselled, supported by a pronounced mineral framework and beautiful verticality. The matter is precise, elegant, with a persistent sensation of purity and freshness. The finish is long, saline, and energetic, a signature of great high-altitude Chardonnays. This cuvée will ideally accompany fish, seafood, delicate poultry, or refined gastronomic cuisine, and can also evolve favorably over several years.
