Domaine Cassagne et Vitailles is located in Montpeyroux, in the Hérault, at the heart of a characterful Languedoc where limestone terroirs, reliefs, and Mediterranean influences give rise to wines with great personality. Founded by Matthieu Rollin and Nicolas Seffusatti, the estate was born from a strong friendship and a life project entirely dedicated to wine. Nimalaya holds a special place in this story, as it embodies an exceptional cuvée, conceived as a tribute to Languedoc, its unique terroir, and the centuries-old know-how of the winemakers who shaped it. The cuvée Nimalaya 2023 is made from 100% Carignan, a historic grape variety of Languedoc, here expressed through the elegance of old vines and the depth of an emblematic terroir rich with 60 years of viticulture. This old Carignan gives the wine a natural structure, aromatic density, and tension that avoid any heaviness despite the Mediterranean intensity of the vintage. Available information mentions old vines located in the communes of Montpeyroux and Saint-Saturnin, on clay-limestone soils and south-facing exposures. The grapes are hand-harvested, with careful berry selection to preserve the quality of the fruit and the nobility of the matter. Nimalaya seeks not only to express a grape variety but a memory of place, work, and transmission. The Magnum format favors a slower and more harmonious evolution, ideal to accompany the aging potential of a structured old Carignan.
