The Hohlen Spätburgunder 2023 from the Wasenhaus estate is a single-vineyard cuvée of great precision, revealing a fresher and more vertical interpretation of Pinot Noir from the Baden region. Led by Christoph and Alexander Wißler in Staufen, the estate has established itself as a key reference for the elegance and clarity of its Spätburgunder, thanks to an approach inspired by Burgundy and meticulous work on the terroirs. The Hohlen plot stands out for its deep limestone soils and a cooler location, promoting tension, aromatic finesse, and length. Vineyard work is carried out with extreme rigor on a small scale to preserve the identity of the place and the purity of the fruit. The 2023 vintage particularly highlights this airy and sculpted dimension of Pinot Noir, without ever sacrificing depth. The nose is fine and elegant, opening with aromas of fresh cherry, redcurrant, and delicate raspberry, accompanied by floral notes evoking peony and rose. Upon aeration, clear mineral nuances emerge, chalky, along with a very subtle spicy touch that adds relief and complexity. On the palate, the attack is straight and precise, supported by perfectly integrated acidity that structures the wine with elegance. The tannins are very fine, silky, and stretched, supporting a pure and luminous fruit. The mid-palate favors tension and balance, with a long, fresh, and persistent finish marked by great purity of expression. The Hohlen Spätburgunder 2023 will ideally accompany refined and delicate cuisine, roasted poultry, white meats, elaborated vegetarian dishes, or mushroom-based recipes. Its finesse and verticality also make it a wine for aging, capable of evolving with grace and complexity over the years. Clos des Millésimes Bordeaux offers this cuvée in a selection dedicated to great European terroir Pinot Noirs, highlighting precise and sought-after single-vineyard expressions. This wine is aimed at lovers of tense and elegant Pinot Noir, sensitive to minerality, freshness, and the clarity of the terroir.

Wasenhaus - Hohlen - Spätburgunder 2023

The Wasenhaus estate, led by Christoph and Alexander Wißler, has established itself as one of the most demanding projects in the Baden region focusing on Spätburgunder. Based in Staufen, the two brothers develop a resolutely parcel-specific approach, attentive to soils, exposures, and plant material, with a philosophy inspired by the great European Pinot Noirs. Their work emphasizes precision, depth, and clarity, with wines built on balance and tension rather than power. Each cuvée reflects a specific origin and a clear intention, revealing the complexity of the southern Baden terroirs. Hohlen represents one of the deepest and most structured expressions in their range.

The Hohlen cuvée – Spätburgunder 2023 comes from the Zuzinger Rosenberg, on poor clay-limestone soils, with a southwest exposure favoring gradual ripening. The parcel is composed of German clones and diverse origins, with a notable feature: about half of the Pinot Noir vines were planted in the 1960s, at high density, bringing complexity and natural depth to the wine. Fermentation is carried out with 75% whole clusters in wooden vats, imparting structure, energy, and aromatic intensity. Aging continues for 15 months in French oak barrels, with a focus on precision and support, without seeking excessive marking. Hohlen is a characterful cuvée, driven by old vines and ambitious vinification.

On the palate, Hohlen 2023 stands out for its depth and controlled intensity. The nose reveals ripe red and black fruits, accompanied by spicy, floral, and slightly earthy notes, highlighted by the imprint of whole cluster fermentation. The mouth is ample, structured, and energetic, with a fine but assertive tannic framework, supported by beautiful freshness. The whole maintains great elegance despite its density, and stretches out on a long, precise, and persistent finish. This wine will ideally accompany roasted meats, lamb, game, or refined gourmet cuisine. A deep and classy Spätburgunder, built for aging, fully illustrating Wasenhaus’s parcel-specific ambition.
