Wasenhaus - Hohlen - Spätburgunder 2023
The Wasenhaus estate, led by Christoph and Alexander Wißler, has established itself as one of the most demanding projects in the Baden region focusing on Spätburgunder. Based in Staufen, the two brothers develop a resolutely parcel-specific approach, attentive to soils, exposures, and plant material, with a philosophy inspired by the great European Pinot Noirs. Their work emphasizes precision, depth, and clarity, with wines built on balance and tension rather than power. Each cuvée reflects a specific origin and a clear intention, revealing the complexity of the southern Baden terroirs. Hohlen represents one of the deepest and most structured expressions in their range.
The Hohlen cuvée – Spätburgunder 2023 comes from the Zuzinger Rosenberg, on poor clay-limestone soils, with a southwest exposure favoring gradual ripening. The parcel is composed of German clones and diverse origins, with a notable feature: about half of the Pinot Noir vines were planted in the 1960s, at high density, bringing complexity and natural depth to the wine. Fermentation is carried out with 75% whole clusters in wooden vats, imparting structure, energy, and aromatic intensity. Aging continues for 15 months in French oak barrels, with a focus on precision and support, without seeking excessive marking. Hohlen is a characterful cuvée, driven by old vines and ambitious vinification.
On the palate, Hohlen 2023 stands out for its depth and controlled intensity. The nose reveals ripe red and black fruits, accompanied by spicy, floral, and slightly earthy notes, highlighted by the imprint of whole cluster fermentation. The mouth is ample, structured, and energetic, with a fine but assertive tannic framework, supported by beautiful freshness. The whole maintains great elegance despite its density, and stretches out on a long, precise, and persistent finish. This wine will ideally accompany roasted meats, lamb, game, or refined gourmet cuisine. A deep and classy Spätburgunder, built for aging, fully illustrating Wasenhaus’s parcel-specific ambition.
