The vat room has been rearranged and the cellar buildings rebuilt, with a new barrel cellar made up of three air-conditioned areas each intended to store 300 barrels. Two cellars are used for the first year and a third for the second year. Led by oenologist Gilles Pauquet , the vinification includes maceration between 28 ° C and 32 ° C for 3 weeks in thermo-regulated stainless steel vats.
Malolactic fermentation takes place mainly in vats, and aging in barrels, more than 50% of which are new. Thanks to these substantial efforts, Château Canon has regained its highest level of quality and all its letters of nobility, with a velvety style, an elegance and refined tannins which give it a good aptitude for aging.
