DOMAINE LES HAUTES TERRES - LES AUTRES TERRES BLANC 2018
The Domaine Les Hautes Terres is located in the Aude Valley, in Languedoc, in the Cirque de Roquetaillade. This terroir, which dates from 50 million years ago, is composed of ocher marl with deposits of fossils of small shells, turritelles and nummulites. In 2000, Gilles Azam bought his first vine, he now owns an area of 13 hectares. He plays with grape varieties, altitude, orientation and organic culture to produce elegant and complex wines.
Les (H)AUTrES TERRES (as he names it) is a Vin de France made from Chardonnay, planted at high altitude (350-450 meters) and exposed to the North East to gain acidity. The Chardonnay vines grow here on the Turritelles marls, very rich in small fossils, resting on marine limestone. The vinification is traditional and natural. Aging lasts 6 months in tanks. This floral wine is a must in summer, perfect for an aperitif, with grilled fish and seafood as well as exotic dishes.
