Domaine des Hautes Glaces - Moissons Malt - 44.8%
Domaine des Hautes Glaces is located at an altitude of 896 meters in the Massif du Dévoluy, in the Hautes-Alpes. It was created in 2009 by Frédéric Revol, an agricultural engineer specialising in the management of living organisms. His desire is to create excellent whiskies that promote soil fertility and minimise the carbon footprint. To date, the distillery has mastered all stages of production, entirely in organic farming. The cereals come from 5 plots with different climatic and geological properties. Fermentation lasts approximately one week and the distillation is carried out in two pairs of Charentais still with open flame: a 2,500-litres wash still and a 700-litres spirit still.
Moissons Malt is the first of the estate's two iconic cuvées. This micro-cuvée is made entirely from Malted Barley. It is a blend of 11 barrels, combining whiskies from 4 plots (Andrieu, Gabert, Saint-Jean and Vulson climate), over 6 vintages(2011, 2012, 2013, 2014, 2015 and 2016). Aging lasts 4 to 9 years in French oak barrels (coarse grained, Cognac, Armagnac and wine).
