Mezan rums are rums from islands or countries of the West Indies and South or Central America. They are produced from a single vintage distillation, aged in oak barrels and bottled one barrel at a time, when ready, under the supervision of the cellar master.
Trinidad 2009 is produced at Trinidad Distillers Limited. Based in Port-of-Spain, TDL cultivates its own yeast strain which adds an individuality to its sugarcane molasses fermentation. The fermentation process takes about 48 hours and is left to stand for several days longer to enhance the flavour development before distillation. This rum was initially aged for 3 years in Trinidad using first-fill heavily charred Bourbon barrels and 9 years in Europe in once-used rum barrels.
