Domaine Gueguen - Chablis 2020
Domaine Gueguen is located in Chablis, in Burgundy. It was created in 2013 by Céline and Frédéric Gueguen, born in winegrowers’ families. They have 25 hectares of vines, mostly planted with Chardonnay in the Bourgogne and Chablis appellations. They also cultivate Sauvignon Blanc for the AOC Saint-Bris, Pinot Noir for Irancy and the old grape variety called Sacy. The vineyard is managed according to the principles of sustainable viticulture and is certified in High Environmental Value (HVE).
The Chablis is made from Chardonnay, the average age of which is 40 years, from the villages of Chichée and Préhy. The mechanical harvest is followed by direct pressing, with cold settling and natural yeasts. Fermentation takes place in vats and the wine goes through total malolactic fermentation. Aging is carried out on fine lees for around 10 months.
