Domaine Bellegarde - Unique - Magnum 2021
Domaine Bellegarde is located in Monein, in the Jurançon appellation in the south-west of France. The estate was founded in 1920 by Gratien Labasse and then passed down from generation to generation. Since 1985, his grandson Pascal Labasse has been running the 12-hectare estate in conversion to organic farming . In the vineyard, the southern heat and the southern wind allow the raisining of the grapes, a technique of over-ripening for the production of sweet wines. The estate produces eight cuvées, half dry and the other half sweet.
Unique dry wine is made from the almost forgotten old grape variety, Camarelet . The grapes are harvested manually at full maturity in mid-September. After cold stabilization (step which consists of leaving the juice after pressing on the fine lees) in order to release the aromas of the grape variety, fermentation takes place in stainless steel vats with indigenous yeasts.
