Rimauresq - Côtes de Provence Rosé 2021
The Domaine de Rimauresq is located in Pignans, in Provence . The estate, which belonged to the Isnard family, was bought in 1988 by the Wemyss family (independent Scottish bottler). The vineyard, in conversion to organic farming since 2016, is made up of several plots planted with 9 different grape varieties (including Cinsault, Mourvèdre, Tibouren and Ugni Blanc for the production of rosés). The terroir is clayey-schistose and crystalline, with sandy and stony parts, and it is common to benefit from the combination of several of these terroirs within the same plot. A modern half-buried cellar allows the grapes to be processed by gravity directly from the vineyard.
Rimauresq Rosé is a blend of Grenache Noir (46%), Cinsault (27%), Rolle (9%), Syrah (8%), Mourvèdre (7%), Tibouren (2%) and Carignan (1%) . The vinification begins with a morning harvest to preserve the freshness of the night at the heart of the fruit. The crushed berries macerate for a long time in thermo-regulated stainless steel vats. During the pressing, which remains moderate to obtain the best juices, the press and free run juices are separated and put in the cold. After decantation, the clear juice is separated from the lees which will be filtered on land. After a period of stabilization, the juices then ferment at low temperature in stainless steel tanks for 2 to 3 weeks. After fermentation, the wine is aged on the lees with regular stirring and the malolactic fermentation is blocked to preserve the freshness of the wine.
