Castle of Fosse-Seche - Eolithe 2020
The Château de Fosse-Sèche is located in Vaudelnay, in the Saumur appellation in the Loire Valley . In 1996, Guillaume Pire left the family vineyard in Madagascar accompanied by his mother Françoise, his stepfather Ueli and his twin brother Adrien . Originally from Belgium and after growing up in Madagascar, Guillaume studied viticulture and oenology in Switzerland while his brother Adrien returned to Belgium to obtain a degree in agronomy. In 1998, Guillaume moved to Fosse-Sèche with his mother and his stepfather and they were joined by Adrien in 2010. In 2012, the brothers took over the Château de Fosse-Sèche with their respective companions: Cécile (companion of Adrien) takes care of the vines and participates in the vinification stages with Guillaume, and Julie (Guillaume's companion) is in charge of the administrative part and communication. The estate has 15 hectares of vines, certified organic and biodynamic farming .
Eolithe is a blend of Cabernet Franc (99%) and Cabernet Sauvignon (1%) grown on a Jurassic plateau with a stony structure (flint) with gravel bound by a slightly clayey soil. The vatting of the grapes lasts from 3 to 15 days, then the wine is aged on the lees in ovoid concrete vats for 14 months .
Grapes: 99% Cabernet Franc, 1% Cabernet Sauvignon
