Castellare di Castellina - Sodi di San Niccolò 2018
Castellare di Castellina is located in the heart of Chianti Classico , in Tuscany . Castellare di Castellina was born from the union of four estates (Castellare, Caselle, San Niccolò and Le Case) on the initiative of Paolo Panerai, with the aim of producing wine of the highest possible quality. The estate extends over 80 hectares, of which 20 hectares are occupied by olive groves. The vines are cultivated on 33 hectares, on the slopes of a natural amphitheater facing south-east, at an average altitude of 370 meters. The vines range in age from 7 to over 45 years, and yields per hectare are kept very low to obtain maximum quality. Excellent sun exposure, good water drainage and a mixed soil containing calcareous marl, galestro and little clay produce well-structured and intense wines, both red and white, suitable for long aging in bottle. No synthetic chemicals are used in the Castellare vineyard, out of respect for nature and to allow the production of certified organic wines. This philosophy is reflected on the labels, which each year bear the design of a different bird which is becoming increasingly rare due to the careless use of poisons and herbicides in the vineyards.
I Sodi di San Niccolo is the great wine of Castellare. It is a blend of Sangiovese (85-90%) and Malvasia Nera (10-15%) . Vinification is carried out in stainless steel vats at a controlled temperature. The wine is aged for 24 to 30 months in barrels, 50% of which are new, then the wine remains in the bottle for 12 months before being marketed.
