Mas del Périé - Fabien Jouves - Haute Côt de Fruit 2021
Fabien Jouves comes from an old peasant family from the Causse. He became a winegrower in 2006 by creating the Mas del Périé on the highest slopes of Cahors . Here, Malbec (also called Côt) is the preferred grape variety. Due to the location of the estate at the junction of the terroirs of the hillsides of Quercy and those of Cahors, plot selection was obvious for Fabien to express the different facets of Malbec. This expression of the terroir is reinforced by biodynamic agriculture certified since 2011, respectful of life, plants, people and their environment. The vinification of the grapes in the cellar is done naturally, without oenological inputs, and the accompaniment of the wine until its maturity, in concrete vats, barrels and casks according to its personality.
Haute Côt de Fruit 2021 comes from Malbec vines with an average age of 25 years. After the manual harvest, the fruit is destemmed then put in vatting for 7 days. Fermentation takes place in concrete vats . The aging lasts 6 months , also in concrete vats, then the wine is bottled without fining or filtration.
