The Macallan is one of Scotland's most famous distilleries and produces one of the best-selling Single Malt whiskeys in the world. Located on the banks of the River Spey in the heart of Speyside , the distillery is based on the Easter Elchies estate, which covers 158 hectares of farmland. The estate includes 37 hectares planted with barley, which is used for the production of whisky. A new distillery building with visitor reception was opened on the property in June 2018. The state-of-the-art facility has been cut into the hillside and features a dramatic, grass-covered wooden roof. There are now 12 “wash stills” (copper stills used during the first distillation), plus 24 “spirit stills” those used during the second distillation. Previously there were 14 stills in total which were reputed to be the smallest in Speyside, although each had a capacity of 3,900 litres. The old stills are unique and appear on the back of the Bank of Scotland £10 note. The distillery is owned by the Edrington Group, which also owns Highland Park and the Famous Grouse and Cutty Sark blends.
The style of the Macallan house traditionally tends towards rich and fruity whiskies . This is the result of the exclusive use of Sherry casks to age the spirit but since 2004 Bourbon casks are also used.
This edition is inspired by the transition to the new year. This Single Malt is made from a combination of first fill ex-Bourbon American oak barrels, and Sherry seasoned European and American oak barrels.
