Alessandra Divella - Blanc de Blancs - Metodo Classico 2020
Azienda Agricola Divella is located in Gussago, in the eastern Franciacorta region of Lombardy , Italy . It was founded in 2012 by Alessandra Divella . It cultivates 2 hectares of vineyards on soils rich in limestone and clay, characteristics unique to Gussago. It practices non-certified organic viticulture, using only minimal treatments of copper and sulfur when necessary. Harvesting is carried out manually, and the grapes are gently pressed using a hand-operated wooden press. Fermentation is spontaneous, using only indigenous yeasts, and takes place exclusively in old barrels, without the use of stainless steel. Although located in the Franciacorta region, Alessandra chooses not to use this appellation, believing that its natural methods and specific terroir deserve their own distinction, drawing more inspiration from the practices of Champagne winemakers than those of Franciacorta.
Blanc de Blancs is made from Chardonnay . It is produced using the traditional method, with fermentation in old barrels and aging on lees for 30 months . It is bottled without dosage .
