The estate works plots spread across several Jura appellations, notably Côtes du Jura, Arbois, and Château-Chalon, in an environment where marls, limestones, and exposed slopes shape wines of character. Organic farming practices reflect a desire to preserve soil life and produce sincere, clear, and minimally artificial wines. The Domaine Grand Crémant du Jura Zero Dosage is made from 100% Chardonnay, a grape variety that finds in Jura an expression that is both ample, lively, and saline. The grapes come from the Les Duboîtes plot, part of the estate's vineyard, with vines aged between 25 and 40 years. The red marl and limestone soils provide a mineral structure particularly well suited to the production of a zero dosage crémant. Fermentation takes place in stainless steel tanks to preserve freshness, aromatic precision, and the purity of the base wine. The aging on lees lasts about 30 months, giving the cuvée more texture, complexity, and finesse in the effervescence. The absence of dosage allows the wine to maintain a straight, dry, and chiseled style, without added sugar to round the finish. This Crémant du Jura thus asserts itself as a terroir cuvée, more taut than opulent, driven by the energy of Chardonnay and the limestone signature of Jura.
