This cuvée of Crémant d'Alsace illustrates the estate's approach to sparkling wines, with a selection of grapes from several plots to build a balanced blend. The harvest is carried out entirely by hand, an essential practice to preserve the integrity of the berries intended for the production of a sparkling wine according to the traditional method. Located in a region recognized for the precision of its whites and the diversity of its soils, the estate relies on this mosaic of terroirs to produce expressive and structured wines. Crémant d'Alsace now holds an important place in regional production, offering a quality alternative to the major sparkling appellations while maintaining an identity unique to the Alsace vineyard. The blend is based on three traditional grape varieties of the Alsace vineyard: Auxerrois and Pinot Blanc, which form the base of the cuvée, complemented by a proportion of Pinot Noir. The grapes come from different plots planted on schist soils, contributing to the structure and tension of the wine. The harvest is done manually to preserve the quality of the clusters intended for the secondary fermentation. After vinification, the wine is made according to the traditional method with a second fermentation in the bottle. The aging on lees continues for a minimum of twelve months, a period that allows the wine to develop more aromatic complexity and texture. The dosage is particularly moderate with only 2 grams per liter, positioning the cuvée in a very low dosage style that favors clarity and precision. The whole aims for a balanced profile between the roundness brought by the Auxerrois and Pinot Blanc and the slightly livelier structure of the Pinot Noir.
On tasting, this Crémant d'Alsace presents an aromatic profile centered on white fruits and citrus, with notes of fresh apple, pear, and lemon, accompanied by discreet floral nuances. The aging on lees brings a slightly brioche-like dimension and a more enveloping texture on the palate. The mousse unfolds with a regular effervescence that supports the natural liveliness of the wine. The low dosage enhances the sensation of tension and highlights the purity of the aromas as well as the mineral dimension from the schist soils. The overall balance favors freshness and clarity, with a dry and precise finish that extends the notes of citrus and white fruits. This style is particularly well suited to aperitifs but can also accompany seafood, oysters, fish ceviche, or fresh cheeses. Under good storage conditions, this cuvée can evolve harmoniously for two to three years.
