Rather than erasing the differences between estates, he keeps the domain name and the harvest year, giving each Armagnac a clearly readable identity. Domaine de Pariot is linked to the Gaube sector, in Bas-Armagnac, a terroir historically appreciated for the finesse and elegance of its eaux-de-vie. This western part of the appellation benefits from an oceanic influence and predominantly sandy soils, favorable to fruity distillates capable of long maturation without losing their liveliness. Laterrade's philosophy is to accompany this evolution with as little intervention as possible, without seeking a uniform taste from one vintage to another. Each bottle thus becomes the testimony of a domain, a harvest, and a cask that have matured together.
Distilled in 1995 at Domaine de Pariot, this eau-de-vie comes from a single year and a single estate, without blending with other vintages. Its prolonged aging in wood has slowly modified the distillate's structure, evolving the initial fruit towards more concentrated nuances of candied fruits, spices, and roasted materials. Over the decades, exchanges with the oak and the cellar atmosphere have softened the texture while preserving an energy still perceptible. The 45.7% strength corresponds to the natural degree of the batch at bottling. Presented at cask strength, this Armagnac has not been reduced by adding water to reach a standardized alcoholic strength. This relatively high strength preserves the aromatic relief and tension of the vintage, while giving more presence to the matter. The profile thus lies between the polished maturity of an old Bas-Armagnac and the vigor that the 1995 year still possesses after its long stay in barrel.
The color presents a deep amber, crossed with copper reflections and light mahogany highlights. The nose opens on ripe plum, dried apricot, and orange marmalade, then gains nuances of vanilla, cocoa, and blond tobacco. After a few minutes, notes of fresh walnut, cinnamon, wax, and precious wood deepen the ensemble without masking the fruit. The attack has a certain breadth, carried by a dense texture and a controlled warmth that gives momentum to the tasting. The mid-palate mixes stewed fruits, roasted almond, sweet spices, and coffee, with a persistent freshness that avoids any heaviness. The finish stretches on citrus peel, bitter cocoa, and a still delicate rancio, supported by the precision of the 45.7%. This vintage will benefit from being tasted alone in a tulip glass but can also accompany a walnut tart, a lightly sweetened dark chocolate dessert, duck breast with figs, or an aged hard cheese.
