Based in Villers-aux-Nœuds, Gaspard Brochet has established himself as one of the most talented representatives of the new generation of Champagne producers thanks to a deeply artisanal and parcel-based approach. Through his "Volume" collection, he explores the multiple facets of the terroirs of the Montagne de Reims by favoring low-intervention vinifications and élevages respectful of the raw material. With L'Abreuvoir – Volume 1, the estate inaugurates a particularly ambitious new cuvée, marked by a true claimed vintage and extended aging that give it an exceptional dimension. This first edition stands out for its rarity and a philosophy more focused on the long term, allowing the wine to develop remarkable depth and complexity. It symbolizes a new step in the estate's evolution while remaining faithful to the principles that built its reputation. L'Abreuvoir, in this first edition, comes from the 2016 vintage and blends 70% Pinot Noir and 30% Chardonnay from the Premier Cru terroirs of Écueil and Sacy. The vines mainly grow on sandy soils, which bring aromatic finesse and elegance to the blend. Unlike the more experimental cuvées in the range, this bottle relies on a more traditional vinification in the Champagne spirit, while maintaining the estate's artisanal philosophy. The wine is made without fining, filtration, or racking, in order to preserve the integrity of its material and natural expression. The long aging on lees is one of the signatures of this cuvée, bringing depth, complexity, and harmony to the whole. This prolonged maturation allows the 2016 vintage to reveal all its richness today, in a remarkable balance between energy and maturity.
On tasting, L'Abreuvoir reveals a particularly complex and refined profile. The nose combines notes of ripe yellow fruits, dried fruits, candied citrus, and fine pastry, accompanied by toasted and slightly spicy nuances developed during the long aging. On the palate, the attack is broad and deep, supported by a creamy texture and a freshness still very present that brings balance and dynamism. The Pinot Noir provides structure and volume while the Chardonnay contributes tension and precision to the finish. The bubbles, perfectly integrated, accompany a dense and elegant material that continues with saline and chalky notes. A gastronomic and contemplative champagne, this cuvée will pair well with noble fish, truffled poultry, and refined preparations based on shellfish.
