Philippe Valette is an outstanding winemaker. Its whites are true wonders that shine beyond the Mâconnais. Located in the village of Chaintré, the estate benefits from a long wine-growing tradition. The 15 hectares of vines, scattered over Chaintré and Vinzelles, are cultivated with fervor in organic farming. The natural balance of the soil and the vines are at the heart of our concerns here. Regular scratches of the soil and a grass cover promote the development of the root system in depth. In the cellar, gentleness and patience guide each of the winemaker's gestures or decisions. The vinifications are made with indigenous yeasts, the wines are entered by gravity. Very long aging on lees (72 months for some vintages!) And in barrels, without racking, preciously refine the wines and reveal all the grandeur of the Domaine's terroirs. A non-existent or very small amount of sulfur is used in each of the wines. The result is prodigious and gives birth to wines that transport to regions of flavors rarely explored in Mâconnais wines.
