The Domaine Céline and Frédéric Gueguen is located in Chablis, in the Yonne, north of Burgundy, in the heart of a vineyard marked by limestone soils rich in marine fossils and a cool climate conducive to the production of precise and taut white wines. Founded in 2013 by Céline Gueguen and her husband Frédéric, the estate relies on deep family roots firmly anchored in the Chablis vineyard, Céline being from the Brocard family. The vineyard has gradually developed to reach several dozen hectares spread over different appellations in the area, notably Chablis, Saint-Bris, Irancy, and the regional appellations of Burgundy. This diversity of terroirs allows the estate to work with several grape varieties while maintaining a common identity based on freshness and precision of the wines. The plots are cultivated with particular attention to soil respect and the natural balance of the vine. In this artisanal approach, the wines primarily seek to reflect the sincerity of the vintage and the personality of their terroir. This Bourgogne Aligoté 2025 is made exclusively from the Aligoté grape variety, the second major white variety of Burgundy after Chardonnay. The vines are planted on typical clay-limestone soils of the northern region, which promote balanced ripening while preserving the natural acidity of the grape. This rustic and vigorous variety produces wines marked by freshness and aromas often oriented towards citrus and crunchy fruits. The grapes are harvested at maturity to preserve the aromatic purity and liveliness that characterize Aligoté. Vinification generally favors tank fermentations to preserve the direct expression of the fruit and the clarity of the aromatic profile. Aging on fine lees for several months adds some texture relief without altering the natural tension of the wine. This technical approach aims to produce a straight and energetic white, faithful to the traditional style of Bourgogne Aligoté.
