Domaine Jérémy Recchione - Bourgogne Aligoté - Les Cerisiers 2024
In the Hautes-Côtes de Nuits, Jérémy Recchione works on a high-altitude Burgundy, with patience and micro-volumes, far from standardized productions. His estate has been built around an artisanal approach, with cuvées sought after for their frankness, precision, and their way of expressing sometimes discreet terroirs. The wines carry a very contemporary identity, but without fashion effects: minimal intervention, selected aging to accompany the material, and a constant search for tension rather than opulence. Aligoté holds a particularly interesting place here, as it reveals a livelier, more direct Burgundy, often more saline than whites made from Chardonnay. Les Cerisiers 2024 fully fits this interpretation, with a confidential cuvée whose extremely limited production enhances its appeal. This white wine does not seek to round off the grape variety but to preserve its brightness, nervousness, and this apparent simplicity that becomes very serious when handled with precision. It offers a finely chiseled expression of Aligoté, rooted in the fresh and limestone soils of the Hautes-Côtes de Nuits.
This cuvée is made from 100% Aligoté, on the Messanges terroir, in the Hautes-Côtes de Nuits area. The soils of white marls and limestone give the wine a clear mineral base, perfectly suited to this long-underestimated Burgundian grape variety. The vineyard is worked exclusively by hand and on horseback, a rare choice that shows a very attentive relationship to the soil and the life of the parcel. Vinification is done by direct pressing to preserve the purity of the juice, the freshness of the fruit, and the natural tension of Aligoté. Fermentation and aging combine Clayver ceramic and 228-liter barrels, two containers that allow combining precision, breathing, and texture. No sulfiting is indicated for this cuvée, which implies healthy harvest, very precise monitoring, and particularly careful bottling. With only 300 bottles produced in 2024, Les Cerisiers belongs to those rare bottles opened as much for their energy as for their uniqueness.
The color presents itself in a bright pale yellow, with almost silvery reflections that announce a tense and nervous wine. The nose evokes fresh lemon, green apple, crunchy pear, white flower, and a more mineral nuance of wet chalk. On the palate, the attack is frank, straight, carried by a lively but well-integrated acidity that immediately gives movement to the wine. The ceramic seems to preserve the purity of the fruit, while the barrel aging brings a slight base without excessively rounding the finish. The whole remains dry, salivating, precise, with persistence on citrus, white fruits, fine bitters, and a saline touch. This Bourgogne Aligoté will pair very well with oysters, sea bream tartare, gougères, snails with parsley butter, dry goat cheese, smoked trout, or Japanese cuisine centered on raw fish. Served around 9 to 11°C, in a rather open glass, it will better reveal its tension, grain, and this limestone freshness that makes the charm of fine terroir Aligotés.
