Located in Preuilly, in the Berry region, Guillaume Sorbe created Domaine Les Poëte with the ambition to reveal the finesse and depth of the terroirs of Central Loire. Coming from a family of winemakers, he first worked in the restaurant and sommelier fields before training in viticulture and oenology, notably in Burgundy. His approach is based on a simple conviction, summed up by the estate's motto: "Less but better." The vines are integrated into a preserved environment, where meadows, trees, and animals contribute to biodiversity and the natural balance of the soils. Le S des Poëte holds a special place in this collection of wines, as it is made from Sauvignon Blanc grapes from plots located in Touraine, in the Cher valley. The grapes come from clay-limestone and flint clay terroirs, notably around Thésée and Châteauvieux. This cuvée offers a bright and accessible interpretation of Sauvignon, while maintaining the precision and rigor that characterize Guillaume Sorbe's wines.
The 2024 Le S des Poëte is made exclusively from Sauvignon Blanc, with controlled yields and particular attention to the balance between aromatic maturity and natural freshness. The plots are worked according to the principles of reasoned viticulture, without organic certification, with adapted grass cover and limited soil interventions. The grapes from Thésée are directly pressed, while those from Châteauvieux undergo skin maceration intended to enrich their aromatic expression. After cold settling, alcoholic fermentation is conducted at low temperature to preserve the fruit's finesse. Aging continues on fine lees in tanks, without seeking a woody imprint, to favor the wine's precision and freshness. The 2024 vintage, marked by relatively cool climatic conditions in the Loire, regains a particularly lively and digestible expression of Sauvignon. Guillaume Sorbe thus favors a wine that is both expressive and balanced, whose personality relies more on the clarity of the fruit and tension than on aromatic power.
The 2024 Le S des Poëte seduces with a radiant bouquet where citrus, vine peach, and white fruits meet, accompanied by delicate floral and vegetal notes. Lemon, grapefruit, and some exotic fruit nuances bring a generous aromatic expression without excess ripeness. On the palate, the attack is lively and precise, with a supple texture that perfectly balances the vintage's natural freshness. A slight chlorophyll dimension recalls the character of Sauvignon, while the limestone soils contribute to the sensation of tension and clarity. The finish is thirst-quenching, supported by citrus notes and a pleasant mineral persistence. Accessible from today, this white wine nevertheless has enough balance to evolve favorably over a few years in the bottle. It will ideally accompany oysters, sea bream ceviche, asparagus, grilled fish, shrimp, or fresh goat cheese.
