The Very Rare Casks 3rd Edition is a limited vintage 2007 release, bottled at cask strength (64.9%). It is a single cask of traditional molasses rum distilled in a Savalle column still, aged for fourteen years in cognac casks, entirely in a tropical climate for maximum concentration and a remarkably clear oak character. The single-cask bottling, without reduction or filtration, delivers a direct expression of the vintage and the imprint of the old Charentais oaks.
The nose opens with a profusion of tropical fruits where roasted pineapple and mango mingle with bitter orange, before revealing expressive esters with a noble varnish-like quality and a framework of warm spices. Aeration reveals notes of cocoa, toffee, and almond, framed by an elegant oakiness inherited from cognac. On the palate, the attack is ample and direct, carried by the natural cask strength which highlights a clean, oily texture. The mid-palate combines roasted sugarcane, citrus marmalade, and stone fruits, with a discreet salinity that enlivens the whole. The very long, dry, and vibrant finish unfolds with dry rancio, toasted nuts, orange zest, and a touch of menthol that underscores the distillate's freshness.
