This Master Blender's edition features a finish in Bordeaux red wine casks. A blend of triple-distilled Irish whiskey, primarily from grains and malts aged in ex-bourbon barrels, then aged for several months in Bordeaux barrels selected for their structure and fine tannins. Blended at 46 percent, without coloring or chill-filtering, to preserve the texture and aromas. Limited edition depending on barrel availability.
The nose opens with red and black fruits such as blackcurrant, morello cherry, and raspberry, complemented by vanilla, light honey, and a hint of cedar. The palate is full and silky, with an attack of strawberry jam and plum, followed by a mid-palate marked by golden malt, light caramel, and sweet spices. The Bordeaux oak brings a delicate tannic grain that structures the whole without hardening it. The finish is long and clean, with blood orange, cocoa, a touch of licorice, and a discreet vinous aftertaste.
At the table, serve it neat in a tulip glass between 16 and 18°C, or with a few drops of water to highlight the red fruits. A great match with duck breast, roasted pork, 24-month Comté, mature cheddar, or 70 percent dark chocolate. In cocktails, it enhances an Old Fashioned with bitter cocoa or an Irish-style Manhattan.
