Tequila San Matias - Tahona Blanco - 100% Agave - 40%
Casa San Matias, one of the oldest tequilas in Jalisco, champions artisanal production where technical precision serves the purity of blue agave. Located in the highlands, it produces straight, aromatic, and textured tequilas, sought after at the bar and at the table. San Matias Tahona was created to celebrate a milestone anniversary for the house and to revive ancestral expertise.
Tahona Blanco is made from Weber tequilana agaves cooked in stone ovens and then ground using a basalt tahona wheel. The musts ferment in pine wood vats before being double distilled in copper stills. The blend is rested in the vats to harmonize the material, then brought to 40% without coloring. An unaged profile that favors the frankness of the vegetal and the minerality of the highlands.
The nose opens with cooked agave, white flowers, and lemon zest, with accents of sweet pepper, fresh herbs, and a hint of green vegetable. The palate is clean and silky. Crystalline attack, saline and slightly oily heart with ripe agave, white spices, and a hint of natural vanilla. The finish is long and clean, lemony, with a mineral grain and controlled warmth.
To serve, pour very chilled between 8 and 10 degrees into a tulip glass. Neat to gauge the texture. A few drops of water reveal the vegetal and spicy sweetness. Excellent base for a dry martini, a strained Paloma, or a highball with sparkling water and lime. Ideal pairing with oysters, ceviche, sashimi, fresh cheeses, and lemony Mexican cuisine.
