Domaine Guillaume Gilles - Cornas 2017
After being trained by great winemakers such as Jean-Louis Chave, the master of Hermitage, Guillaume Gilles settles in the vineyard of his grandfather, in Cornas, in 2002. He occupies half a hectare of vines on the terroir “Les Chaillots”, composed mainly of granite.
His philosophy is based on the respect of the terroir, traditions and environment. The work is done manually, the winemaking (which occurs in whole bunches and without destemming) and the maceration are divided into parcels. The fermentation is done in concrete vats using the natural yeasts of the grapes and the maceration lasts at least three weeks with pigeages and pumping over for extraction. The wines are then aged in oak barrels (10% new oak) and demi-muids for 18 months and are neither filtered before bottling.
To fully enjoy all its aromas, it is best to leave this Cornas for a minimum of 2 years in the cellar.
