Domaine Patrick Baudouin - Le Cornillard 2016
The Patrick Baudouin estate has thirteen hectares of vines on the terroirs of "Black Anjou", west of Anjou. The soil is made up of schists, sandstone, volcanic rocks from the very old Armorican bedrock. The range consists of Chenins de Savennières, Quarts de Chaume, dry white, semi-dry Anjous, and Côteaux du liquoreux layon, Red Anjous from Cabernets. The cellar, built in noble materials in 1910, has a neat, harmonious, and functional architecture.
The Cornillard cuvée is made from Chenin from a beautiful plot on a hillside plunging towards the Layon. The average age of the vines is 50 to 70 years. The vinification is done without adding sulfur until the first racking. Fermentation is slow, until spring, without adding yeast, in new barrels and already-used barrels. The malolactic is spontaneous. The aging takes place in barrels until bottling.
