Fabien Jouves - Haute Cot de Fruit 2019
Fabien Jouves comes from an old farmer family in the Causse region. He became a winemaker in 2006 by creating the Mas del Périé on the highest hills of Cahors. Here, Malbec (also called Cot) is the grape variety of choice. Because of the situation of the domain at the junction of the terroirs of the Quercy hills and those of Cahors, the plot selection was obvious for Fabien to express the different facets of Malbec. This expression of the terroir is reinforced by biodynamic agriculture certified since 2011, respectful of life, plants, people and their environment. The winemaking of the grapes in the cellar is done naturally, without oenological inputs, and the accompaniment of the wine until its maturity, in concrete vats, barrels and casks according to its personality.
Haute Côt (e) de Fruit is made from Malbec vines whose average age is 25 years. After manual harvest, the fruit is destemmed and then put in vat for 7 days. Fermentation takes place in concrete vats and barrel. Aging lasts 6 months, also in concrete vats and barrel, then the wine is bottled without fining or filtration.
