Zacapa is a rum maker from Guatemala that is particularly famous today. The specificity of the distillery is to use concentrated cane juice and natural yeasts extracted from pineapple. Once fermented, the juices are distilled in a still with a single copper column, then the eaux-de-vie are transported to be aged in the cellars located at an altitude of more than 2,300 meters.
Zacapa Solera 23 rum is the original and emblematic rum of Zacapa. It is a blend of rums aged between 6 and 23 yearsin a Solera of American Bourbon barrels, European wine and Spanish sherry. In a Solera system, barrels are organised in levels, from youngest to oldest. Thus, the young rums are intoned on the highest floor and then over the years, the part of the rums evaporated in the lower floors (angel’s share) is completed by the rums on the upper floors. Thus, the rum goes down the levels of the barrel as it ages and the level closest to the ground, called Solera, is a mixture of rums of different ages.
