DOMAINE DE CHEVALIER 2012
The Domaine de Chevalier is located in Pessac-Léognan, a sub-region of the Graves appellation in Bordeaux. It is classified Grand Cru Classé of Graves. The Domaine de Chevalier has the particularity of having retained its title of "domain", more common in Burgundy than in Bordeaux. In 1983, the estate passed under its current ownership when it was bought by the Bernard family, who renovated the cellar and extended the vineyard. The estate has around 45 hectares of vines on soils rich in gravel and clay, most of which are devoted to red grape varieties.
The Domaine de Chevalier Rouge 2012 is a blend of Cabernet Sauvignon (65%), Merlot (30%) and Petit Verdot (5%). The harvest is manual, in crates with meticulous sorting in the vineyard, and in the cellar before and after destemming. Vinification is carried out in two vats to increase plot selection, extraction and refine the blend. The wine is aged in barrels (including 1/3 new barrels) for 16 to 18 months, with stirring of the lees during the first 4 months.
