Dominique Lucas - Quintessence - Chasselas 2019
Les Vignes de Paradis is located in Ballaison, in the Haute-Savoie department. The 7.5-hectare estate is owned by Dominique Lucas, from a family of winegrowers for more than 5 generations. The vineyard, on the shores of Lake Geneva, is spread over two appellations: Crépy and Marin. All the work on the vines and wines is carried out with the greatest respect for biodynamics; the vines are ploughed on horseback and treated with medicinal plants harvested in the mountains and dried on the estate as well as essential oils. After the harvest, the vines are entrusted to the sheep to maintain the soil. The new tanks were built by him, incorporating spring water from Thonon-les-Bains. The estate is certified in organic farming.
The Quintessence cuvée is made from Chasselas, harvested on several plots on the slopes of Ballaison. Aging on lees is carried out.
