Domaine de la Sénèchalière is located in Saint-Julien-de-Concelles, in the Nantes region of the Loire Valley. After the manual harvest, the grapes are pressed very slowly (about 9 hours) to accustom the juice to the air and thus avoid possible defects linked to oxidation. The wines do not undergo any oenological input and the fermentations are done with indigenous yeasts. Even the addition of sulphite to protect the juices is natural, thanks to volcanic sulphur; a technique that is not widely used because it is very difficult to implement.
