Father Labat - Yellow Cane - 51%
Père Labat is a brand of rums from the island of Marie-Galante . The history of the distillery dates back to the 18th century when Madame Poisson acquired the estate, then a simple sugar factory on the island of Marie-Galante. At the beginning of the 20th century, Mr. Rameau, who had become the owner of the estate, made improvements and invested in a still and a Creole column in red copper. These investments then made the Domaine Poisson pass from a sugar refinery to a distillery. He also decides to pay tribute to a pioneer in the techniques of distillation of fresh cane wine; Father Labat. These quality rums, produced in line with the great agricultural rums by the Poisson distillery, have therefore been baptized the "rums of Père Labat".
This rare rum was created by Jean-Cédric Brot from a unique variety of Canne Jaune . This forgotten variety was found in Marie-Galante by Père Labat. The cane is fibrous, difficult to cut and grind and thus produces very limited yields. The juice extracted is more concentrated and sweeter than other varieties of sugarcane. 3,500 bottles were produced.
