Mas des Chimères - The Passers-by 2023
The Mas des Chimères is located in the commune of Octon on the edge of Lake Salagou , in the Terrasses du Larzac du Languedoc . The Dardé family worked the land in mixed farming (sheep, olive trees, vines) for several generations until the 1960s when livestock farming was abandoned in favor of vines. From 1974, Guilhem Dardé worked with his father and uncle. The grapes were then brought to the village Cooperative Wine Cellar. He moved into a private wine cellar in 1993 and created the Mas des Chimères. His wife Palma joined him in the vineyard from 1995, then Maguelone , his daughter, joined them in 2008. The vineyard is managed using certified organic farming .
Les Passantes is a blend of Ribeyrenc and Counoise .

"A light and vibrant red wine with aromas of fresh cherry, pomegranate, and dried herbs. On the palate, it has a delicate, almost translucent texture, supported by fine acidity and a touch of salt."
