The third chapter in the Aventure series, this vintage showcases Bordeaux Distilling's artisanal ambitions: an organic French rye whisky, crafted in Bordeaux by a team of four partners, including actor Jean Dujardin. Aventure No. 3 extends the exploration of rye into a more accomplished and time-honored register, with a five-year maturity and a double maturation designed to combine depth, precision, and elegance.
The recipe is based on certified organic rye, fermented slowly to preserve the grain's clarity, then distilled in small batches to maintain a pure aromatic framework. The “Double Cask” aging combines two complementary oak profiles: first, a fine-grained wood that structures and stretches the mouthfeel, then more generous barrels that bring roundness and pastry nuances. This duo of wood refines the texture without masking the cereal identity of the rye. The 43% bottling seals the balance between expressiveness, drinkability, and length, in a deliberately gastronomic style.
On the nose, the whisky opens with baking spices (caraway, sweet pepper, cinnamon), orange zest, dried flowers, and a hint of light honey. The palate, straight and silky, unfolds toasted cereal, natural vanilla, hazelnut, and an echo of cocoa, supported by a savory tension that maintains the rhythm until the finish. The persistence is long, clean, spicy without harshness, with a very fine oak and a discreet saline reminiscence that is the house's signature.
When served, Aventure No. 3 is best served neat around 16–18°C, perhaps with a drop of water to highlight the rye spices. Its length on the palate also makes it a superb bar ally: a precise and elegant Manhattan, a refined rye Old Fashioned, a harmonious Boulevardier or a clear highball that highlights its freshness. At the table, it naturally pairs with grilled duck breast, roasted poultry with herbs, a mature Comté cheese, a discreet blue cheese or a nut and caramel dessert.
Adventure No. 3 stands as the synthesis of the collection: where No. 1 favored the caress of fine oak and No. 2 the luminous energy of a more generous profile, this third edition unites the two worlds thanks to the Double Cask and time.
