With Les Rendez-Vous No. 7, Billecart-Salmon celebrates Pinot Meunier in a highly pure interpretation. This edition highlights the fruity expression and saline finesse of the grape variety, carried by an Extra Brut dosage that favors the energy, directness, and clarity of the terroir. The bubbles here serve the vibration of the Meunier, without artifice, in a precise and contemporary style.
Made exclusively from Pinot Meunier, the wine is vinified with a focus on aromatic clarity and a silky texture. The secondary fermentation process, using the traditional method, is followed by a long aging on lees to refine the bubbles and develop floral, citrus, and delicate pastry nuances. The low final dosage highlights the frankness of the palate, where the ripeness of the fruit is balanced with a refreshing tension.
Tasting:
The pale straw color is enlivened by a fine and regular effervescence. The nose opens with crisp pear, mirabelle plum and a basket of small red fruits, enhanced by white flowers, a hint of zesty citrus and a tiny chalky echo. The palate is vertical and crystalline, with a juicy fruit center carried by a salivating frame. The finish, long and slender, returns to ripe lemon, white currant and a touch of almond, leaving an impression of purity and great drinkability.
Serve between 8 and 10°C in a tulip glass to enhance the aromatic depth. As an aperitif, its precision works wonders. At the table, it enhances oysters and shellfish, raw or grilled fish, citrus ceviche, roast poultry with fresh herbs, or delicate vegetable dishes. Its tension and low dosage also make it an ideal companion for Loire goat cheeses.
