Based in Villers-aux-Nœuds, Gaspard Brochet pursues a unique approach within the new generation of Champagne producers by highlighting single-vineyard cuvées produced in very small quantities. His "Volume" collection is a true laboratory for expressing the terroir, where each wine tells the story of a grape variety and a specific plot. Through artisanal vinifications and low-intervention aging, he seeks to reveal the finest nuances of each origin. Le Mouton – Volume 2 is undoubtedly one of the most exclusive cuvées in this collection, showcasing Meunier in a rare and particularly ambitious form. Produced in very limited quantities, this cuvée reflects the estate's desire to explore original paths while remaining faithful to the identity of its terroirs. The 2022 vintage finds a deep, textured, and decidedly atypical interpretation here.
Le Mouton – Volume 2 is made exclusively from Meunier grapes from the "La Montagne" plot, located in the Premier Cru terroir of Écueil. The vines are planted on soil composed of white clay and green marl, a combination that promotes richness of texture while maintaining a beautiful natural freshness. Unlike the other cuvées of the estate, this cuvée benefits from a maceration mixing whole clusters and destemmed grapes, a rare approach in Champagne that brings more structure, aromatic depth, and complexity. The vinification is then carried out by gravity in small oak barrels to preserve the integrity of the juice and the finesse of the extractions. True to the estate's philosophy, the wine is neither fined, filtered, nor racked, thus retaining all its substance and natural energy. This artisanal approach gives the wine a strong personality, perfectly in line with the character of Meunier and the 2022 vintage. The rarity of the production further enhances the exclusive character of this cuvée.
On the palate, this "Le Mouton" cuvée reveals a particularly original expression of Meunier. The nose combines aromas of ripe black fruits, plum, cherry, and blackberry with spicy, floral, and slightly smoky notes derived from maceration and aging in wood. The mouth impresses with its density and texture, with a broad and energetic body that sometimes recalls great still wines more than the classic codes of Champagne. The clay soils bring depth and volume while the natural freshness of the terroir preserves the overall balance.
